WHAT IS IT?: Pork leaf lard, rendered from the visceral fat around a pig's kidneys, is highly prized for its neutral flavor and high, delicate quality. Because it is odorless and mild, it is ideal for both sweet and savory baking (producing exceptionally flaky, tender pie crusts and pastries), roasting vegetables, and frying, while offering a healthier, lower-saturated-fat alternative to butter.

 

It is highly sought after by bakers because it does not have the "porky" taste associated with fatback lard, making it a superior choice for delicate recipes.
